A herbaceous plant of the legume family, known since ancient times, is called lentils. Thanks to their medicinal properties, lentils are very beneficial to health. This leguminous plant helps with cancer, nervous disorders, weakened immunity. Soup made from lentils turns out to be tasty and healthy.
Types of lentils
There are several varieties of lentils: red, brown, and green. Green is used as a side dish for meat, fish, and salads are also prepared from it. You can use brown lentils to make stews or casseroles. But red lentils, due to the fact that they cook quickly, are perfect for making soups and mashed potatoes.
Making Lentil Soup
Lentils should not be soaked before cooking, only rinsed very well.
To make lentil soup you will need:
- red lentils - 300 g;
- onions - 200 g;
- carrots - 200 g;
- celery root - 200 g;
- water - 1.5 l;
- tomatoes in their own juice - 1 can (200 g);
- vegetable oil - 3 tbsp. l.;
- garlic - 3-4 cloves;
- parsley - 1 bunch;
- salt and pepper to taste.
Onions, celery root, carrots and garlic cloves, rinse, peel and cut into small cubes. Put a frying pan on the fire, brush it with vegetable oil and lay out the vegetables, which must be fried until half cooked.
Meanwhile, rinse the lentils and add them to the toasted vegetables. The contents of the pan should be fried until the vegetables are ready, and then transferred to a saucepan, pour over the broth, add salt and pepper.
Place the lentil soup over low heat and simmer until the lentils are completely cooked. Only at this time can you add canned tomatoes in your own juice and finely chopped parsley to the soup, and then cook for about 7-10 minutes more. Serve the ready-made lentil soup hot. Bon Appetit!
