Sweet bell peppers are a real vitamin bomb. In addition, it contains valuable fiber, is juicy and has a piquant taste. Such a vegetable is indispensable for the preparation of many dishes - soups, side dishes, hot and, of course, mouth-watering salads. Delicious peppers can be bought all year round, so you should prepare salads with them as often as possible.
Pepper salad with spicy dressing
This salad is perfect as an appetizer or a side dish with a grilled meat dish. To make the dish more beautiful, choose peppers of different colors - green, red, yellow.
You will need:
- 4 large fleshy peppers;
- 200 g pitted olives;
- 2 cloves of garlic;
- 4 tbsp. tablespoons of olive oil;
- 2 tbsp. tablespoons of peeled almonds.
Wash peppers, dry, remove partitions and seeds. Cut vegetables into thin strips and place in a salad bowl. Place almonds and olives in a blender and chop. Add olive oil and garlic, stir well. Pour the sauce over the salad, stir again and place the dish in the refrigerator for half an hour.
Fish salad with bell peppers
Any fish with dense and lean meat is suitable for such a salad - hake, sea bass, cod.
You will need:
- 200 g of boiled fish fillet;
- 2 large red bell peppers;
- 1 potato;
- 1 egg;
- mayonnaise;
- 1 tbsp. a spoonful of lemon juice;
- freshly ground black pepper.
Wash bell peppers, remove seeds and stalks. Bake vegetables on a wire rack until tender, then remove the skins. Cut the peppers into strips. Cook the potatoes in their skins, peel and chop finely. Boil the egg, cool and cut into small pieces.
Cut the boiled fish into pieces, put in a salad bowl, add baked peppers, potatoes and an egg. Sprinkle the mixture with lemon juice and sprinkle with freshly ground black pepper. Season the salad with mayonnaise and serve.
Vegetable salad
Each housewife prepares this popular salad of peppers, cucumbers and tomatoes in her own way. Try a classic version with onions, herbs, and salad dressing.
You will need:
- 2 fleshy ripe tomatoes;
- 2 sweet peppers;
- 1 medium-sized cucumber;
- 1 small onion;
- a small bunch of parsley and dill;
- salt;
- 3 tbsp. vegetable oil lodges;
- 1 tbsp. a spoonful of lemon juice;
- 1 teaspoon of sweet mustard;
- freshly ground black pepper.
Wash and dry vegetables and herbs. Cut tomatoes and cucumbers into thin slices, onions into rings. Put the tomatoes and cucumbers in a salad bowl, and sprinkle the onions with salt, pour with a teaspoon of vegetable oil, rub with your hands. This will make the onion softer and less bitter. Transfer the onions to a salad bowl.
Pepper, peel from partitions and seeds, chop into thin strips and add to vegetables. Pour vegetable oil and freshly squeezed lemon juice into a jar with a screw cap, add ground pepper and mustard. Shake the mixture well and pour over the salad. Stir the dish thoroughly and serve.
