Beshbarmak is one of the favorite national dishes of Kazakh, Tatar and Bashkir cuisine. Each nation prepares this dish in a special way. Beshbarmak with chicken in Tatar style is tasty, satisfying and, importantly, an economical option for a hot dish for a large number of guests.
It is necessary
- - chicken carcass - 2 pcs.
- - potatoes - 1 kg.
- - egg - 2 pcs.
- - flour - ½ kg
- - carrots - 2 pcs.
- - onions - 5-6 pcs.
- - butter - 1 pack (180 g)
- - salt
- - black pepper
- - greens
Instructions
Step 1
Boil the washed chicken carcasses in a large saucepan. Salt the water. Peel vegetables: potatoes, carrots, onions. Prepare a couple more pots and a large skillet.
Step 2
Prepare the dough for beshbarmak: add eggs, a teaspoon of salt to the flour, stir, then pour in half a glass of boiled water at room temperature. Knead the dough thoroughly, it should be very steep. Cover the dough with a towel to keep it dry and set it aside for about half an hour. Then knead the dough again, divide into 3-4 pieces and roll each piece thinly. Dry the sheets directly on the table. Cut into diamonds with a sharp knife. Place the rhombuses on a large sprinkle, sprinkled with flour, and leave to dry.
Step 3
Carefully remove the cooked chicken from the broth, allowing the liquid to drain. Divide the broth into three parts. Leave one part for serving in bowls. In the second part of the chicken broth, boil the potatoes, cut into large pieces (each tuber - into 2 or 3 parts). In the third, you need to cook diamonds from the dough. The diamonds are boiled for 5 minutes, so they need to be placed in the boiling broth at the end of cooking the whole dish so that they do not cool down.
Step 4
Slice the onion into rings. Fry it in a skillet in a large amount of butter. Add carrots, cut into strips or small cubes. You do not need to fry the carrots, but boil them whole in the broth along with the potatoes.
Step 5
Prepare a large, flat dish. First put the potatoes on it, then the chicken, divided into large pieces, then the diamonds, and pour the contents of the pan on top (butter, onions, carrots). Decorate the dish with any herbs and immediately serve beshbarmak in Tatar style to the table! Serve the hot chicken broth bowls separately.
