    • nuts - ½ cup;

Step 1

Beat the eggs with a whisk or mixer. Gradually, in small portions, add granulated sugar. Continue whisking until the sugar crystals are completely dissolved.

Rub the curd through a sieve. Melt the butter in a water bath or microwave. Toss it with the curd. Add this mixture to the beaten eggs.

Add baking powder to the flour. Pour flour gradually into the curd-oil mixture, stirring it thoroughly.

Wash the raisins in cold water. Pour boiling water over it and leave for 30-40 minutes. Put the raisins on a linen napkin in one layer, let it dry slightly. Roll in flour before adding to the dough. This is to ensure that the raisins are evenly distributed in the finished muffin.

Choose nuts. For curd cake, walnuts, hazelnuts, almonds, pistachios are better than others. Dry them lightly in a skillet. Grind the nuts in a blender or coffee grinder. Leave a part, about 1/5, for dusting, add the rest to the dough.
