An unusual touch of salted caramel in the usual creamy ice cream will make the dessert unforgettable!
It is necessary
- Vanilla ice cream:
- - 4 yolks;
- - 400 ml of cream 33-35%;
- - 65 g of sugar;
- - 1 and 1/3 tsp vanilla extract;
- Salted caramel:
- - 80 g of sugar;
- - 160 g cream 33-35%;
- - 2/3 tsp salt.
Instructions
Step 1
Let's start by making caramel. Put a thick-walled frying pan over medium heat and add sugar to it. Stir with a spatula: it should begin to melt. Once this has happened, gently rotate the pan to darken the caramel.
Step 2
In the meantime, heat the cream and then very carefully add to the pan with sugar. Be extremely careful: the caramel will begin to actively seethe and bubble! Do not burn yourself! Gently continue to stir with a spatula, this time until the sugar dissolves in the cream. Add salt, remove from heat, leave to cool.
Step 3
In a saucepan, combine the cream and half the sugar. We put on medium heat, bring to a boil and remove from the burner.
Step 4
Mix the yolks separately with the remaining sugar and vanilla. In a thin stream, stirring continuously, add a hot mixture of cream and sugar to the yolks. Pour everything back into the saucepan and return to the stove over low heat. We brew until the mixture begins to thicken. Remove from heat, stir for a couple of minutes and let cool slightly.
Step 5
Filter the resulting cream through a sieve and combine with caramel. Mix thoroughly and cool to room temperature, then pour into an ice cream container, put in the freezer and stir every half hour for 2 hours (4 times in total, this will be enough).
