It is necessary

  • - turkey, weighing from 2.5 kg;
  • - 4 oranges;
  • - 50 ml. olive oil;
  • - greens for decoration;
  • - salt to taste;
  • - 2 cloves of garlic;
  • - 50 ml. mayonnaise.

Instructions

Step 1

Rinse the turkey well. The meat must be fresh and well defrosted. Make small incisions on the back and sides. The depth of the cuts should not be more than a couple of centimeters. Take a cooking needle or thin, sharp knife and carefully puncture the turkey carcass at a short distance. This is necessary so that the meat is better saturated with the marinade.

Step 2

Wash the oranges in warm water and pat dry with a towel. Take a fine grater and, without peeling off the peel from the orange, rub it on the grater so that the peel begins to turn white in places. Then cut the oranges into large pieces and divide in two. Mix one part with the grated zest, squeeze the juice from the second and mix with the first. Add half of the mayonnaise and olive oil to the mixture, lightly salt. Let it brew for 30 minutes and add finely grated garlic cloves.

Step 3

With the resulting marinade, wipe the turkey from all sides, add a little marinade inside. Tie the legs with twine and place the turkey on a high-sided baking sheet. Let it brew for another 30 minutes. Then wipe it off with the remaining mayonnaise and place in the oven. Bake at 180 degrees for two to three hours, depending on size. If necessary, you can add some plain boiled water to a baking sheet as you cook to prevent the meat from burning underneath. Cool the finished turkey slightly, transfer to a dish and decorate with herbs before serving on the festive table.
