Matnakash is the national bread in Armenia. It turns out to be very unusual, tasty and satisfying. The secret of this bread lies in the correct kneading of the dough.

It is necessary
- - 550 g flour
- - 2 tbsp. l. sour cream
- - 12 g salt
- - 20 g granulated sugar
- - 10 g yeast
- - 400 ml of water
- - 2 tbsp. l. vegetable oil
Instructions
Step 1
First, heat 100 ml of water, add granulated sugar, sour cream, yeast, mix everything well. Put in a warm place for 15-20 minutes.
Step 2
Put flour in a bowl, add salt. Make a well, pour in the yeast and remaining warm water. Knead the dough.
Step 3
Grease your hands and table with butter, pour the dough and knead with your hands. You need to knead for a long time, about 20-25 minutes. This is the whole secret of bread. When the dough becomes elastic, roll it up, brush with butter on all sides and place in a bowl. Cover and store in a warm place for 1-1.5 hours. The dough should increase in volume by 3 times.
Step 4
Take the dough, place it on a baking sheet, pre-oiled with vegetable oil and lined with parchment paper. Stretch the dough with your hands, give it an oval shape. Make grooves around the perimeter and in the middle.
Step 5
Cover with a damp towel and let rise, about 10-15 minutes. Then brush with water mixed with oil.
Step 6
Place the dough in an oven preheated to 180 degrees. Bake the matnakash for 10-15 minutes. Remove from the oven, sprinkle the bread with water and cover with a towel, leave for a while.
