Potato pancakes are one of the most famous dishes of Belarusian cuisine. At the moment, potato pancakes are prepared almost all over the world using various ingredients. Delicate, tasty and crispy pancakes with bacon and onions are obtained.
It is necessary
- - potatoes - 6 pcs.;
- - onions - 2 pcs.;
- - lard - 70 g;
- - chicken egg - 1 pc.;
- - garlic - 2 cloves;
- - vegetable oil - 3 tbsp. l.;
- - salt, pepper, spices - to taste.
Instructions
Step 1
Wash, peel and chop the potatoes. There are several ways to grind potatoes, such as in a food processor, blender, or with a grater. Depending on the chosen grinding method, you will get a different taste, as well as the type of potato pancakes.
Step 2
To prevent the chopped potatoes from darkening, cover the container with the potatoes with a lid. You can also add a small amount of acid. To do this, you can rub one onion with the potatoes or sprinkle the potatoes with lemon juice.
Step 3
Pass the bacon, peeled onion and cloves of garlic through a meat grinder. Then combine lard, onion, garlic and grated potatoes, add egg yolk, salt, spices and pepper to taste.
Step 4
Now you need to squeeze out the mass of grated potatoes. You can skip this if you constantly stir the minced potatoes during the frying process, preventing the starch from settling to the bottom.
Step 5
Preheat the pan well, pour vegetable oil into it and lay out the pancakes, which should look like pancakes in appearance. Fry potato pancakes on both sides over medium to high heat. The dish prepares quite quickly, but if you have made thick pancakes, you can cover the pan with a lid and simmer for a while so that their middle is not soggy.
Step 6
Traditionally, potato pancakes are served with sour cream; you can also use fresh vegetables such as tomatoes, cucumbers and herbs.
