It is necessary
- - 2 eggs;
- - 150 g of sugar;
- - 0.25 tsp salt;
- - 60 g butter;
- - 225 g flour;
- - 1, 75 tsp baking powder;
- - half a lemon;
- - 100 g of candied lemon;
- For impregnation:
- - 1 tbsp. cognac;
- - 1 tbsp. icing sugar;
- - 1 tbsp. lemon juice;
- - 1 tbsp. water.
Instructions
Step 1
Squeeze the juice from half of the lemon and remove the zest with a fine grater. Put the oven to heat up to 180 degrees and line the form with baking paper (or grease and sprinkle with flour).
Step 2
Sift flour with baking powder, add lemon zest to the mixture, mix.
Step 3
Using a mixer, beat eggs with added sugar and salt for about 5 minutes. Add the flour mixture to the liquid ingredients, pour in the lemon juice, mix quickly until smooth. Add candied fruits, stir again. Put the dough in a mold and send it to the hot oven for half an hour.
Step 4
While the cake is preparing, you should do the impregnation: mix all the ingredients in a small saucepan, bring to a boil, reduce heat to low and simmer for 5 minutes.
Step 5
Put the still warm ready-made cake on the wire rack, use a fork or torch to make many punctures on it and pour over the syrup.
