Features of cooking julienne
In Russian cuisine today there are many recipes for making julienne, for example, from mussels, shrimp and squid, meat, mushrooms or fish, but the traditional combination of products for julienne is chicken and mushrooms. It is this combination that makes julienne aromatic, tasty and appetizing.
Julienne should be baked in special ceramic containers or disposable foil tins. In addition, julienne can be baked in a loaf of bread, from which the crumb was previously removed.
Julienne recipe with mushrooms and chicken
To prepare julienne with mushrooms and chicken, you will need the following ingredients:
- chicken legs - 1.5 kg;
- mushrooms - 500 g;
- onions - 400 g;
- sour cream - 200 ml;
- hard cheese - 200 g;
- wheat flour - 1 tbsp. l;
- vegetable oil - 2 tbsp. l.;
- butter - 50 g;
- bay leaves - 4 pcs.;
- salt, ground black pepper - according to your taste.
Rinse the chicken legs under running water, and then put in boiling salted water. Next, add a bay leaf and one onion, pre-peeled and chopped. It is necessary to cook chicken until cooked. Only then separate the meat from the bones and cut it into strips.
Wash, peel and cut the onions into very thin rings or half rings, depending on the size of the onion.
Sort the forest mushrooms thoroughly, remove the debris, and then cook for 15 minutes in salted boiling water. Now you can put the mushrooms in a colander and cut into small pieces.
Put the pan on the fire, grease its surface with butter and put onions and mushrooms, which should be fried for about 10-15 minutes. After this time, add the meat to them, salt and pepper, sprinkle with wheat flour and mix thoroughly. Now you can add sour cream, stir again and put the pan over low heat.
After 15 minutes, put the contents of the pan into small glass or ceramic tins, sprinkle with grated hard cheese. Put the julienne molds on a baking sheet, bake in the oven at 180 degrees for about 10 minutes.
