Thanks to this method of preparation, rabbit meat acquires a wonderful, delicate and rich taste. For a side dish, potato pancakes can be perfect.
It is necessary
- - 550 g of rabbit meat;
- - 25 g pork fat;
- - 205 g of onions;
- - 950 ml of milk;
- - 325 g of champignons;
- - 55 ml of vegetable oil;
- - black pepper and salt;
- - 65 g flour.
Instructions
Step 1
Wash the rabbit meat, remove the top film from it, cut, and then salt and pepper properly. Fry in a pan with well-heated vegetable oil until golden brown on all sides.
Step 2
Cut pork fat into small pieces and fry separately in a pan with vegetable oil. Then peel the onion, chop finely and add to the pan to the pork fat, fry for about 12 minutes more.
Step 3
Put the fried onions, bacon and rabbit meat into a special oven dish (preferably ceramic). Then salt all this, mix and add milk.
Step 4
Cover the pan with a lid, preheat the oven and cook the meat at a temperature of about 190 for 2 hours 35 minutes.
Step 5
Rinse the champignons, dry with a paper towel and cut into small strips. And then transfer them to a frying pan with heated oil and fry over low heat for 25 minutes.
Step 6
Then add flour, lightly fry it with the mushrooms and then remove the pan from the heat. Pour in carefully, stirring constantly the milk and put the pan on the fire again. When the milk boils, turn off the fire.
Step 7
Add the prepared mushroom sauce to the rabbit meat, which is in the oven, 25 minutes before it is cooked, and continue to simmer everything together.
