There are many ways to cook rabbit stew with potatoes. There is a classic recipe. You can also stew the rabbit with potatoes in a pot, sour cream or other additives.

Braised rabbit with potatoes: a classic recipe

Required ingredients: Rabbit carcass, 3 tbsp. spoons of butter, celery, 2 pcs. onions, bay leaves, 4 glasses of red wine, 4 potatoes, 2 carrots, 500 grams of mushrooms, half a glass of flour, as well as water, salt and pepper to taste.

Wash the rabbit thoroughly and chop it into portions. Dip them in flour. Melt the butter in a roasting pan and saute the meat pieces until golden brown. Cut the onion and celery into cubes and send to the roasting pan. Then add bay leaves, salt and pepper to taste, 4 glasses of water and wine. Be sure to bring the broiler liquid to a boil and reduce heat slightly. It takes two hours to stew a rabbit under a lid.

After a while, add the potatoes and carrots to the roasting pan. Naturally they must be peeled and cut into cubes. Also add the mushrooms and simmer the meat for half an hour. The vegetables should be soft enough. Then, separately mix half a cup of flour and 1/3 cup of water. Add the resulting solution to the meat and mix everything. It remains to wait until the liquid in the brazier has completely thickened.

For cooking you will need: rabbit carcass, 3 cloves of garlic, onion, 200 g of bacon, 10 sprigs of parsley and thyme, 3 tbsp. tablespoons of olive oil, a glass of red wine, bay leaves, as well as 6 potatoes, 1 tbsp. a spoonful of sugar, salt and pepper.

Wash the rabbit carcass and divide it into small pieces. Chop the garlic and onion well. Be sure to cut the bacon into strips. Then form a bouquet of aromatic herbs. To do this, tie thyme, parsley, and bay leaf together.

Fry the pieces of meat well in a cast iron pot until golden brown in oil. Then put chopped garlic and onions into a pot. Add a bouquet of herbs there. For aroma and taste, it doesn't hurt to put bacon in the pot. Just be sure to wait until it acquires a golden hue during the cooking process. Now you need to pour red wine and 3 glasses of water into the pot. Simmer the contents of the pot for about an hour and a half.

For now, cut the leftover onions into rings and caramelize them in a skillet with butter, sugar, pepper and salt. Peel and chop the potatoes, then place them with the rabbit and cook for twenty minutes. Serve the finished dish with caramelized onions.
