Step 1

Wash the meat, dry thoroughly with a paper towel or napkins, roll up and secure with cooking string.

For the marinade, combine olive oil, lemon juice, a teaspoon each of ground pepper and salt. Grate the meat with cooked marinade, wrap with cling film and send to marinate in a dark, cold place for 10 hours.

Preheat the oven to 190 degrees. Wash young potatoes very well and cook until half cooked in slightly salted water, without peeling the skin. Next, peel and chop the red onion into thin half rings.

Rinse the thyme and rosemary, shake off excess water, and tear off the leaves. Place the boiled potatoes along with the chopped onions in a large dish, spreading the shavings of butter over the surface of the vegetables.
