Squid pilaf is somewhat similar to traditional pilaf in its composition - it includes rice, onions, carrots, and garlic. But the cooking technology here is completely different and resembles, rather, Spanish paella. The fact is that squid is a very delicate product that cannot be subjected to long heat treatment. Otherwise they will become tough and rubbery.

It is necessary

    • For 4-5 servings of pilaf:
    • 1 glass of round grain rice;
    • 3 squid carcasses;
    • one large onion;
    • one large carrot;
    • 5 cloves of garlic;
    • vegetable oil for lubrication;
    • 50 g butter;
    • salt to taste;
    • dried basil to taste.

Step 1

For your dish to have a delicate texture and delicate taste, use round grain rice - Krasnodar or special paella rice. It is better to take squids from the Commander - small, pinkish. They are caught in the Far East. They are tastier than giant ones and do not taste bitter.

Step 2

Prepare food. Rinse the squids with cold water, clean them of entrails, chitinous chords, skin and films. If the skin and films do not separate well from the carcasses, pour boiling water over the squid, and then immediately transfer to ice water. After that, the skin can be very easily removed with a stocking. Cut the squid into strips. Peel the vegetables. Cut the onion into small cubes, grate the carrots on a coarse grater.

Step 3

Rinse the rice thoroughly several times with cold water. Then pour boiling water, salt and cook using the folding method. To do this, take more cooking water than the rice can absorb. Throw the finished rice on a sieve and drain the excess water.

Step 4

While the rice is cooking, cook the squid with vegetables. Fry the onion until golden brown in vegetable oil. Add carrots and sauté for 3 minutes. Then add the finely chopped garlic. Reduce heat, add butter and simmer for another 3-4 minutes, stirring occasionally.

Step 5

Add the chopped squid to the vegetables and cook, stirring occasionally, for 2 minutes. Squids should barely have time to curl up during this time. Season with salt and basil, pour in a quarter cup boiling water and remove from heat.

Step 6

Combine freshly cooked, hot rice with squid. Stir gently from bottom to top and serve immediately. Thanks to the butter, the taste of garlic in this dish becomes exquisite and goes well with squid.
