Kholodnik is a dish of Belarusian cuisine. This is a cold summer soup similar to Russian okroshka, but it has a significant difference. A cold beet is prepared with beets, which gives it a beautiful rich color, and is filled with kefir.

- For a chiller with tops:
- 500 g of young beets with tops;
- liter of kefir;
- 2 fresh cucumbers;
- 75 g green onions;
- 2 eggs;
- 2 tablespoons of sour cream;
- a teaspoon of sugar.
- For a lemon juice chiller:
- 2-3 beets;
- 2 large cucumbers;
- 0.5 liters of kefir;
- medium head of onion;
- a small bunch of green onions;
- 2 eggs;
- 4 tablespoons of fat sour cream;
- dill;
- lemon juice;
- sugar;
- salt.
- For a ham chill:
- one large beet;
- 4 eggs;
- 6 pieces of medium-sized potatoes;
- 4 fresh cucumbers;
- 300 g ham (smoked meat or sausage);
- kefir;
- unsalted carbonated mineral water;
- green onions;
- dill;
- table horseradish;
- salt.
Instructions
Step 1
Cooler with tops
Rinse the young beets together with their tops under running water. Then cut off the tops and peel the beets. Put beets in a saucepan, cover with water and place on the stove to cook. About ten minutes before cooking, put the tops in a saucepan. When the beets are cooked, fold them along with the tops in a colander and let the water drain. Finely chop the beets and tops and transfer to a clean saucepan.
Step 2
Boil eggs, peel and cut into cubes. Grate fresh cucumbers or cut into thin strips. Wash, dry and chop green onions. Place everything in a saucepan over the beets. Add sour cream and sugar, stir and cover with kefir. Refrigerate. Sprinkle with finely chopped parsley and dill before serving.
Step 3
Refrigerator with lemon juice
Wash and boil the beets, then peel, grate on a coarse grater, transfer to a deep bowl and fill with cold boiled water so that it covers the root vegetable. Peel the onions and cut them as small as possible. Cucumbers, dill and green onions, wash and dry. Grate the cucumbers and chop the dill and green onions with a knife. Fold everything over to the beets and cover with kefir. Add sugar, salt and season the cooler with squeezed lemon juice. Serve sour cream separately.
Step 4
Chilled ham
Wash and boil the beets and potatoes. Then peel and cut into small cubes. Hard boil the eggs, peel and chop finely. Wash and dry cucumbers and dill. Grate the cucumbers on a coarse grater, and finely chop the dill. Cut the ham or smoked meat into thin strips.
Step 5
Transfer all ingredients to a deep bowl or saucepan, mix thoroughly, cover the dishes with a lid and refrigerate. Before serving, spread the prepared ingredients of the fridge on plates, fill with kefir and chilled mineral water (in a 1: 1 ratio), salt and season with table horseradish to taste.
