In cooking, it turns out, not only juicy ripe red tomatoes are used, but also sour green ones. Moreover, green tomatoes can be used to prepare not only vegetable snacks, but also soups, side dishes and even sweet desserts.

- For the green tomato Chutney sauce:
- - 1.5 kg of green tomatoes;
- - 200 g of apples;
- - 300 g of onions;
- - 1 tsp. ground allspice and coarse mustard;
- - 2 tbsp. l. 8% wine vinegar;
- - sugar
- salt to taste.
- For Green Tomato Garlic Soup:
- - 600 ml of meat or vegetable broth;
- - 200 g green tomatoes;
- - 1 onion;
- - 1 small carrot;
- - 3 cloves of garlic;
- - 10 g of parsley root;
- - 40 g of rice;
- - 5 g butter;
- - salt to taste.
- For roasted green tomatoes:
- - 5 large green tomatoes;
- - 1 glass of flour;
- - 1 glass of breading - corn grits
- bread crumbs
- breadcrumbs;
- - 2 eggs;
- - 1 tsp. ground black pepper and salt;
- - butter for frying.
- For candied green tomatoes:
- - 1 kg of green tomatoes;
- - 1 kg of sugar;
- - 1 glass of water;
- - zest from 3 oranges;
- - 4-5 g of citric acid.

Step 1
Green Tomato Chutney Sauce
Cut the washed green tomatoes into 4 pieces, cut out the pulp and remove the seeds. Peel the onion. Pass the tomato core and onions through a meat grinder, salt and leave for 3 hours. Wash the apples and cut them into small wedges. Chop green tomatoes into thin strips.
Step 2
Drain the tomato and onion mixture. Put the tomatoes and apples in a saucepan, pour over the mixture of onions and tomato pulp, add sugar, vinegar, mustard and pepper. Simmer until thickened. Pour the Chutney sauce immediately into sterilized jars, close the lid. Store in a cool place.
Step 3
Green tomato soup with garlic
Cut the onions into small cubes. Grate the carrots on a fine grater. Fry vegetables in butter until golden brown. Cut the green tomatoes into slices and add them to a slightly boiling broth. Boil them until soft, covered over low heat.
Step 4
Add onions, carrots, grated parsley root, rice to the tomatoes. Season with salt, add finely chopped garlic and cook for 10-15 minutes until rice is completely cooked. Rub the soup through a sieve. Bring the soup to a boil again.
Step 5
Fried green tomatoes
Cut the tomatoes into slices about 1 cm thick. In one bowl, combine the flour with salt and pepper, beat the eggs in another, and add a glass of breading in a third.
Step 6
Heat butter over medium heat. Dip each piece first in flour, then dip in an egg and dip again in the breadcrumbs. Fry the slices for 3-4 minutes on both sides until golden brown.
Step 7
Candied green tomatoes
Slice the tomatoes, remove the seeds and rinse in cold water. For candied fruits, you need to take tomatoes with dense pulp. Pour the prepared tomatoes with water, bring to a boil and cook for about 5 minutes. Then drain the water, refill with fresh cold water and boil again for 5 minutes. Repeat this procedure 3-4 times.
Step 8
Drain the boiled tomatoes to drain the water. Make a syrup - dissolve sugar in water. Dip green tomatoes in sugar syrup and cook for 10 minutes 2-3 times with infusion for 10-12 hours. Add citric acid crystals during the last boil.
