Bright, rich and unusual tomato soup can be prepared any day. This dish is perfect for both a festive table and a quiet family dinner. Lovers of Italian cuisine will especially appreciate this dish.
It is necessary
- - 2 liters of fish broth;
- - 2 onions;
- - packaging of a seafood cocktail;
- - 600 g of tomatoes in their own juice;
- - 3 tbsp. l olive oil;
- - 100 rice;
- - 2 tbsp. l soy sauce;
- - 1 lemon;
- - 2 pcs of potatoes;
- - greens.
Instructions
Step 1
Cut the peeled potatoes into thin strips. Cut the onions into thin half rings. Rinse the rice with warm water.
Step 2
Pour fish stock into a saucepan and bring to a boil. Add rice to the broth and add potatoes after 10 minutes.
Step 3
Pour olive oil into a saucepan and heat it up. Sauté the onion until golden brown. Add seafood shake, cover and simmer for 5 minutes.
Step 4
Peel and chop canned tomatoes. Add them to the saucepan. Simmer seafood, onions and tomatoes for 5-6 minutes, stirring constantly. Add 3-4 tablespoons tomato juice, soy sauce, lemon juice and spices to taste. Mix everything.
Step 5
Place the vegetable and seafood mixture in a saucepan of rice and potatoes. Bring the soup to a boil.
Step 6
Add chopped herbs to a saucepan with ready-made soup. Let the soup steep for 15-20 minutes and serve. Garnish with a thin lemon wedge and garlic croutons.
