Pithiviers is a French cuisine dish. It turns out to be very light, tasty, airy. It is impossible to break away from eating this amazing cake.

- - 410 g butter
- - 1 tsp. salt
- - 125 g of water
- - 70 g granulated sugar
- - 1 glass of almonds
- - 2 eggs
- - 1 tbsp. rum
- - icing sugar
Instructions
Step 1
Prepare the dough. First, cut the butter into cubes. Then mix it with flour and grind in a blender until crumbled.
Step 2
Dissolve the salt in water. And gradually add 1 tbsp. l. into the flour mixture until the dough gathers into a ball and crumbles. Wrap the dough in plastic and put it in a cold place for 15-20 minutes.
Step 3
Pull out the dough and roll it into a rectangle 1-1.5 cm thick. Divide the dough visually into 3 parts. Fold the bottom third of the dough into the center and cover with the top. Turn the dough 90 degrees and roll it into a rectangle, then fold it back into a rectangle and roll it out, repeat this one more time.
Wrap the dough in plastic wrap and store in a cold place for 2-2.5 hours.
Step 4
Prepare the filling. Whisk 60 g of sugar and butter. Add 50 g flour, rum, ground almonds, egg and beat for another 3-5 minutes. Refrigerate the mass so that it does not spread.
Step 5
Divide the dough into 2 equal pieces and roll out 5-7 mm thick. Cut out two circles. Lubricate the edges of one circle with an egg. Place the filling in the center and cover with the second circle. Make a hole in the dough with a knife to let the steam escape during baking.
Step 6
Brush the egg over the cake. Preheat the oven to 180 degrees, place the pie, and bake for about 40-50 minutes until golden brown.
Step 7
Sprinkle icing sugar over the cake and serve.
