It is believed that the first inverted cake was made in the Taten sisters' pastry shop at the end of the century before last. The history of the creation of the dessert is funny and exciting. One day, while making a regular fruit pie, the sisters made the mistake of putting apples directly into a mold that was not filled with dough. On the hot stove, the sugar turned to caramel, soaking the thinly sliced fruit. Customers liked this option very much, besides, the cake turned out to be elegant and mouth-watering. The enterprising sisters turned the treat into a brand, giving the dessert its own name.

Today, inverted pies have become one of the brightest signs of French cuisine. They are made not only with apples, but also with other fruits: plums, peaches, pears, quince, apricots. The basic principle is the same: first, the form is filled with slices of fruit, laid in the form of scales, then the fruit is poured with a mixture of sugar, butter, vanilla and cinnamon. When heated on the stove, the fruits caramelize and acquire a pleasant rich taste. Place the dough on top and turn the cake over after baking. Classic shortbread dough can be replaced with yeast or puff pastry.

Serve "Tart Taten" with ice cream, custard, purchased or homemade vanilla sauce. The pie can be eaten hot, warm or chilled, if necessary, it is frozen and quickly reheated in the oven. It is not recommended to use a microwave oven, the dessert will be less tasty.

Apple "Tart Taten"

The first pies were made exclusively from apples. It is preferable to take aromatic sweet-sour fruits, the taste of the cake will be brighter and more expressive.

Ingredients:

  • 200 g wheat flour;
  • 100 g butter;
  • 6 tbsp. l. ice water.

For filling:

  • 1 kg of juicy ripe apples;
  • 70 g butter;
  • 120 g sugar;
  • 1 tsp cinnamon.

Sift flour on a board, put butter cut into pieces, chop everything with a knife into small crumbs. Pour in cold boiled water, quickly knead a soft homogeneous dough. Wrap it in plastic and place in the refrigerator.

Until the dough reaches the desired condition, prepare the filling. Peel the apples, cut into neat slices. Heat butter in a thick-walled pan, sprinkle sugar evenly. When it melts and takes on a caramel shade, put the apples in the pan. The slices should be placed neatly, in a spiral or in the form of scales. Leave the fruit to caramelize for 10-15 minutes, sprinkle with ground cinnamon.

If the cake is baked in a different form, put the apples into it and pour over the hot caramel. However, a frying pan in which the fruit was baked is also suitable for baking. Remove the dough from the refrigerator and roll it into a round layer. Lay it in a mold, the edges can be slightly tucked inward. Use a fork to make several punctures on the cake.

Place the dish in an oven preheated to 200 degrees. The cake is baked for about 40 minutes. Turn the finished product onto a dish. Serve immediately with a scoop of ice cream or vanilla sauce. You can cut the pie into portions and garnish each one with fresh mint leaves and a curl of homemade custard.
