- Sponge cake with apricots:

- - 180 g butter;
- - 100 g heavy cream;
- - 4 eggs;
- - 2 tbsp. vanilla sugar;
- - 400 g of apricots.
- Caramel:
- - 30 g butter;
- - 100 g of sugar.

Step 1
Remove the biscuit butter from the refrigerator in advance - it should be soft. Also, take out the eggs in half an hour. They should be at room temperature.
Step 2
Prepare the caramel at this time: melt the butter in a skillet with a snap-off handle that can be used to cook in the oven. Sprinkle sugar evenly over the butter, reduce heat to low and keep on the stove for a couple of minutes. Then remove from the burner and leave to set.
Step 3
Wash the fruits, cut in half, remove the stone. Put the oven to heat up to 190 degrees.
Step 4
For a biscuit dough, beat the soft butter with sugar into a light and fluffy cream (for about 5 minutes). Add eggs one at a time, mixing thoroughly each time. Add vanilla sugar and beat again.
Step 5
Gradually stir in the flour with the rest of the ingredients and mix quickly until smooth. Whisk the cream separately and stir into the rest of the dough.
Step 6
Place the apricot halves, cut side down, into the caramel and cover with the biscuit dough. Place in the oven for 40 minutes. Cool the finished pie for 2 hours in a tin at room temperature, then turn over onto a serving plate.
