Finnish almond-flavored apple pie is traditionally served chilled with ice cream or whipped cream. Finns love to serve this cake for breakfast with coffee and for dinner as a dessert.

100 grams of softened butter;
100 grams of granulated sugar;
1 cup flour;
2 teaspoons baking powder
50 ml cream 20% fat.
For filling:
3 sour apples;
100 grams of granulated sugar;
50 ml of rum mi cognac;
100 grams of butter;
2 tablespoons brown sugar
1 tablespoon flour;
100 grams of finely chopped roasted almonds;
100 grams of almond slices.
Peel the apples from skin and seeds, chop thinly, put in a bowl, sprinkle with sugar, pour over with rum or cognac, mix gently and set aside for 30 minutes.
Mix flour with baking powder. In a deep bowl, beat the butter and sugar, add cream, add flour and baking powder and mix everything thoroughly. Form a ball out of the dough, after sprinkling flour on your hands, wrap it in foil and refrigerate for 15 minutes.
Roll the chilled dough into a thin circle with a diameter of 30 cm. To make it easier to transfer the dough into a baking dish, it can be rolled out between two layers of cling film. Then remove the top layer of the film, and with the help of another, transfer to a greased mold. The diameter of the mold must be less than 30 cm so that the sides can be formed from the dough.
Put the apples beautifully on the dough, put the pie in the oven for 20 minutes at a temperature of 200 degrees. During this time, melt butter in a small frying pan, add brown sugar, flour and chopped almonds, mix everything thoroughly, heat the mixture for 5 minutes, stirring constantly.
Remove the pie from the oven, spread the almond mixture over the surface of the apples, and then bake for about 10-15 minutes. Remove the finished cake from the oven, sprinkle with almond slices and chill. Serve with a scoop of ice cream or whipped cream.
