Vegetarian stew

To prepare the stew, you will need 1 young zucchini, 4 medium potatoes, a large onion, a carrot, 2-3 cloves of garlic, 1 sweet bell pepper, 1 ripe tomato, vegetable oil, spices and fresh herbs. Prepare the vegetables first. Peel the zucchini and potatoes and cut into cubes, chop the onion and pepper into rings, carrots into strips, cut the tomato into several pieces. Chop the garlic and herbs finely.

Heat the cauldron. Pour in oil so that it covers the bottom. Saute the onions on it until golden brown, then add the carrots. After 5 minutes, send pepper rings and a tomato to the cauldron. Season with salt and spices to taste. When the vegetables have juiced, lower the zucchini and potatoes. Simmer over low heat for half an hour. Then add garlic to vegetables, hold for a couple of minutes and remove from heat. Garnish with fresh herbs such as parsley, dill, jusai, or green onions.

Stew of courgettes and potatoes with meat

Meat eaters will definitely appreciate the stew made from vegetables and meat. It can be prepared according to the same recipe as the vegetarian one, only at the very beginning, fry the meat, or it can be done according to the original recipe. For the dish, you need to take a small piece of pork or beef pulp, medium-sized zucchini, preferably zucchini, 2-3 large potatoes, 1 onion, 1 carrot, 1 bell pepper, 2-3 cloves of garlic, vegetable oil, spices and fresh herbs.

Cut the zucchini into even circles, 0.3 cm thick. Fry them in a hot skillet in oil on both sides. Set the zucchini aside and tackle the potatoes. Clean it, rinse and pat dry with a towel. Cut into strips and deep-fry until golden brown.

Chop a cauldron or thick-walled skillet. Pour in vegetable oil and fry the meat, cut into cubes. Reduce heat to just below medium. Chop the onion and pepper into rings and chop the carrots into strips. First, send the onion to the meat, after a couple of minutes carrots, then pepper. Add salt and seasoning. This dish perfectly combines black pepper, paprika, turmeric, nutmeg, sumac and a little grated frozen lemon. Simmer the future stew until the meat is done.

Once the pork or beef is tender, combine the stew with sautéed courgettes, potatoes, and garlic. Simmer for 5 minutes and remove from heat. Serve immediately, sprinkling with fresh herbs on top.
