Despite the rather simple set of ingredients, this salad looks very original on a plate. The dish can be prepared for a holiday or served as a complement to daily treats. In any case, such a salad will be appreciated even by fastidious gourmets.
It is necessary
- - lettuce leaves
- - 1 chicken breast
- - salt
- - ground black pepper
- - green asparagus
- - 5 cherry tomatoes
- - shallots or green onions
- - quail or chicken eggs
- - olive oil
Instructions
Step 1
In a separate bowl, combine chopped shallots and finely chopped lettuce leaves. Dip the cherry tomatoes in boiling water for a few minutes and then peel them off. Mix all ingredients thoroughly. In this case, the tomatoes should turn into a homogeneous mass.
Step 2
Boil the asparagus for 3-5 minutes in lightly salted water. Fry the chicken breast in olive oil until a crust appears. Cut the asparagus and chicken into small pieces.
Step 3
Boil a small amount of water, use a fork or whisk to twist the funnel and pour all the eggs into it one by one. As soon as the protein turns white, carefully place the eggs on a plate.
Step 4
Mix all cooked ingredients except eggs thoroughly and put on a plate. Season the mixture with olive oil and season with salt and pepper to taste. Place poached eggs last. Garnish the salad with mint leaves before serving.
