One of the delicious, hearty and interesting dishes is hot pancakes. It's easy to cook them, the main thing is to choose a delicious filling. These pancakes can be savory or sweet, and can be served with breakfast or dinner, accompanied by sauces, butter or sour cream.
Wheat pancakes with cottage cheese
Try cottage cheese pancakes. They can be served with sour cream or sweet fruit sauce.
You will need:
- 2, 5 glasses of milk;
- 2.5 cups wheat flour;
- 15 g of yeast;
- 2 eggs;
- 0.5 teaspoons of salt;
- 2 teaspoons of sugar;
- 20 g butter;
- oil for lubricating the frying pan;
For soldering:
- 100 g of cottage cheese;
- 1 teaspoon of sugar;
- 1 egg;
- 2 tbsp. tablespoons of butter.
Heat the milk slightly, dissolve the yeast and butter in it, add half the pre-sifted flour. Stir the dough well and let it sit. Beat the mixture with a mixer, add the remaining flour and salt. Separate the yolks from the whites and mash them with sugar. Whisk the whites in a separate bowl until fluffy. Add yolks and whites to the dough, mix gently from top to bottom. Let the dough rise - it will take about 15 minutes.
While the dough is coming up, tinker with the filling. Melt the butter, crush the cottage cheese with sugar and an egg into a homogeneous mass. Grease a pan with oil and heat. Pour a portion of the dough over it and, tilting the pan from side to side, distribute the dough over the surface. Fry the pancake until half cooked, and then spread it with grated cottage cheese and melted butter. Quickly turn the pancake curd down, press it into the pan and fry until golden brown. Place ready-made pancakes in a dish and keep warm until serving.
