Shiitake mushroom soup is a very simple and delicious dish. It is prepared quite quickly, and the difficulty lies only in finding all the ingredients. You will be very lucky if you have a shop with Asian products nearby.
It is necessary
- - green onions - 1 bunch;
- - transparent or glass vermicelli - 50 g;
- - vermicelli - 50 g;
- - honey mushrooms or enoki - 50 g;
- - shiitake - 80 g;
- - tofu - 100 g;
- - sake (can be replaced with a drop of vinegar and white wine) - 1 tablespoon;
- - mirin (rice sweet wine, can be replaced with sherry with sugar) - 1 tbsp;
- - Miso pasta - 1 tablespoon;
- - soy sauce - 2 tablespoons;
- - chicken or vegetable broth - 4 cups.
Instructions
Step 1
Cut off half a centimeter at the base of mushrooms - honey agarics or enoki. Rinse the shiitake mushrooms, peel them and cut them lengthwise from top to bottom. Cut the tofu (bean curd) into cubes. Place all ingredients in separate cups.
Step 2
Go ahead and prepare the broth. Combine ready-made vegetable or chicken broth, sake, mirin, miso paste, soy sauce in a saucepan. Stir everything with a spoon or fork.
Step 3
You can substitute mirin for Sherry with sugar. Sake can be replaced with a drop of vinegar and white wine. Bring the mass to a boil, in this state, hold the mass for 2 minutes.
Step 4
Add enoki and shiitake mushrooms, noodles and tofu to the soup. Save some of the tofu for garnish.
Step 5
Cut the onion into small pieces with a sharp knife. Combine the onion and tofu cubes in a medium cup.
Step 6
When the mushroom soup has boiled for 6 minutes, add the chopped green onions. Cook for a few more minutes, then pour into bowls, garnish with tofu cubes and serve.
