The original Chinese watermelon dessert will delight you with its unusual taste and sweet crispy crust.

Step 1
Wash the watermelon, cut, separate the pulp from the rind, carefully remove all the seeds. Cut the pulp into small diamond-shaped pieces and roll them in flour.

Dissolve the starch in cold water, add the egg whites and stir thoroughly. Dip the watermelon diamonds into the starch mixture and mix.

Fill a saucepan with vegetable oil and put on high heat. Heat to a temperature of 110 degrees, or simply heat the oil well.

Remove the starch wedges and add to the oil. Fry until they are covered with a hard crust, then remove the saucepan from the heat, but continue cooking for another minute. After this time, the diamonds should turn light yellow.
