Ice cream is a delicious delicacy that is always associated with summer and good mood. In hot summer weather, you can make cherry ice cream. This dessert has a rich creamy taste and a very delicate texture.
It is necessary
- - cream with a fat content of 35% (500 ml);
- - icing sugar (100 g);
- - egg yolks (5 pcs.);
- - cherry syrup (80 ml).
Instructions
Step 1
Pour 300 ml of cream into a small saucepan, put on low heat, bring to a boil, remove from heat and cool to 40 degrees. While the cream is cooling, place the cooled yolks in an enamel bowl and beat them with 50 g of powdered sugar into a thick, strong foam. Pour the cooled cream into the whipped yolks in a thin stream, without stopping to interfere.
Step 2
Put the resulting mixture of whipped yolks and cream in a water bath and cook for 10-15 minutes until thickened. We remove the bowl from the water bath and for quick cooling we immediately put it in a container with ice water, after which we put it in the refrigerator for 15 minutes.
Step 3
In a separate bowl, drive in the remaining cream with 50 g of powdered sugar until they form a stable foam. Stir the cooled milk-yolk mixture with whipped cream and cherry syrup (you can use cherry jam syrup).
Step 4
Pour the ice cream blank into a plastic container, close the lid tightly and put it in the freezer for 4 hours. To avoid the formation of too coarse crystals, during the first 2 hours of freezing, it is recommended to take the ice cream out of the refrigerator every 20 minutes and mix thoroughly.
Step 5
Finished ice cream, if desired, can be garnished with fresh cherries.
