    • 400 g dry shortbread cookies;
    • 3 tablespoons of cocoa;
    • 150 g butter;
    • 2 eggs;
    • 50 g almonds;
    • 50 g of peanuts;
    • 100 g sugar;
    • 50 g of brandy;
    • 2 g vanillin.

Step 1

Preheat a skillet and sprinkle the almonds and peanuts on a dry heated surface. With constant stirring, sauté the nuts over medium heat for 3-5 minutes. Place the almonds on a tray or large flat plate and leave to cool to room temperature.

Step 2

Place a lump of butter in a bowl. Place a saucepan of water over moderate heat and put a bowl of butter in it. Melt the butter to the consistency of thick sour cream, remove the bowl from the pan and let the butter cool slightly.

Pour the sugar into the butter, stir and beat in the eggs. Stir well until the sugar grains are completely dissolved. In the finished sausage, sugar should not crunch on the teeth. Then add cocoa to the mass. Stir until the mixture is thick and viscous, and a uniform brown color.

Grind the nuts in a blender or food processor and add to the butter and chocolate mixture. You can use a wooden kitchen hammer or potato grinder to turn the cookies into flour. Add a few grams of vanillin and stir the mixture.

Divide the cookies into two equal portions. Set aside one part for a while, and grind the other in a blender and pour into the chocolate dough. Add cognac to the mixture and mix thoroughly. Instead of brandy, you can use a couple of tablespoons of chocolate liqueur.

Take the second piece of cookie and break it into small pieces with your hands. They will play the role of lard in the future sausage. Add the crushed biscuits to the minced sausage in small portions and stir. The mass should be thick, but make sure that it does not crumble and maintains its viscosity.

Step 7

Place the minced meat on a piece of thick cellophane and form a sausage. Wrap the sausage in cellophane and refrigerate for a few hours.

Cut the finished sausage into pieces and serve with hot tea. Chocolate sausage with warm milk or cocoa is very tasty.
