It turns out that you can make jam from walnuts, and from its unripe fruits. This jam is made wherever walnuts grow. This process is laborious, but the result is worth it.

Instructions
Step 1
Take the fruit of a walnut of the so-called milk ripeness - such fruits have a green, not yet formed peel. Peel them from the top green crust, fill them with cold clean water and leave for two days. Change the water in the container 3-4 times a day.
Step 2
Prepare lime water. To do this, mix clean cold water and slaked lime in a 10: 1 ratio (that is, for example, take 500 g of lime for 5 liters of water). Let the mixture sit for 3-4 hours, then strain with cheesecloth.
Step 3
Dip the nuts in lime water for a day, stir them often. This is necessary in order to get rid of bitterness. After a day, rinse the nuts thoroughly and pierce them with a fork in several places. Then immerse them in cold water again for two days.
Step 4
Submerge the nuts in boiling water and cook for 10 minutes. Then drain the water by pouring it into a colander.
Step 5
Prepare sugar syrup: pour a glass of water into sugar (with the calculation of 1 kilogram of sugar per 1 kilogram of nuts) and bring to a boil. Put a few clove buds, the juice of one large lemon and the nuts themselves, prepared in the way described above, into the boiling syrup.
Step 6
Bring the mixture to a boil, let cool and bring to a boil again. Repeat the process three times, then cook the jam until tender. When ready, let cool and pour into dry, clean jars.
