- For 8 cookies:
- -1 large green apple
- -1 and ¼ cups wheat flour
- -1 glass of oats
- - ¾ cup ground or whole almonds
- -¼ cups of ground sugar cane
- -1 teaspoon baking powder
- 1/2 teaspoon baking soda
- -2 teaspoons ground cardamom
- - ½ teaspoon ground cinnamon
- 1/2 teaspoon salt
- - zest from one lemon
- -3 tablespoons of honey
- - ¾ glasses of riccotta (optional)
Instructions
Step 1
Preheat oven to 400 degrees. Line the baking sheet with parchment paper. On a grater, finely grate the apples, remove the bones and skin.
In a large bowl, thoroughly combine flour, oats, almonds, sugar, baking powder, baking soda, cardamom, cinnamon, and salt.
Step 2
Cut the butter into small pieces. Use your hands to stir the butter together with the other ingredients.
Step 3
Add apple slices, honey, zest, and riccott to a bowl. Mix well with a wooden spoon.
Step 4
Form the dough into small round cakes. Sprinkle a little flour on the parchment paper and line the cookies.
Step 5
Sprinkle the cookies with cane sugar on top. Bake for 20-30 minutes until golden brown at a temperature of 300-350 degrees.
Step 6
Remove the baking sheet from the oven and let the cookies cool. Serve with hot tea or coffee.
