Sometimes it turns out that guests are expected to arrive literally in half an hour, but there is nothing to treat them with. But a delicious lemon muffin can be baked in half an hour from products that are always at hand.
So, we need:
- 130 grams of butter (if absent, you can replace it with margarine, it will turn out to be no less tasty);
- 130 grams of granulated sugar;
- 130 grams of flour;
- 2 eggs;
- 1 lemon;
- half a teaspoon of baking soda.
Melt butter or margarine in the microwave or in a water bath. Add granulated sugar and beat with a blender or mixer for 3 minutes. Add eggs and beat for another 3 minutes. Add flour, knead. Grind half of the lemon in a blender, after removing the seeds. Squeeze the juice of the second half of the lemon into the dough, add the chopped lemon and half a teaspoon of soda (quicklime), knead.
Put the resulting dough in a cake pan, pre-oiled. The remaining squeezed lemon half can be used to decorate the cupcake. Preheat the oven to 180 degrees and bake for 20 minutes. We check the readiness with a knife, as a rule, twenty minutes is enough for baking a cake.
