Step 1

To make pancakes properly, you need a clean and dry frying pan. Some housewives like to leave the pans after frying the onions, because precious drops of oil remain there. Such equipment is not suitable for making pancakes, they immediately stick to the bottom and are difficult to separate. All that remains is to clean and rinse the pan again.

Step 2

Break eggs into a clean bowl and beat lightly with a whisk. Add 400 ml of warm milk and stir. If you don't feel like messing around with warming milk, just dilute it with a little hot water. So it will take less milk.

Add salt, sugar and baking soda. Mix everything thoroughly.

Pour in the pre-sifted flour in small doses. Prepare a sour cream dough to minimize the presence of flour lumps. And only after that we add warm milk in small portions and dilute to the desired consistency. The dough should be slightly stringy, like vegetable oil.

Step 5

Pour some vegetable oil into a hot pan so that only the bottom of the pan is slightly greased. Or oil can be added to the dough with little or no stirring. This way the pancakes will be less greasy.

Step 6

Cooking pancakes. Pour the dough into the pan to close its bottom and fry until golden brown along the edge of the pancakes. As soon as the blush appears, you can fry on the other side.

Step 7

If you want to be in time for something else, do not turn the stove on to high heat. Medium or low heat is fine and the pancake will not burn. Serve the pancakes with cream or your favorite jam. You can also stuff it with meat or any other filling.
