- To prepare the dough:
- 550 g flour
- 1 glass of sour cream
- 4 yolks
- 100 g sugar
- 1 tbsp butter
- ½ tsp baking soda
- ½ tsp salt.
- For filling:
- 5 cups raspberries
- 200 g sugar
- 1 cup whipped cream or sour cream
- whipped with sugar
Instructions
Step 1
Rinse and sort the raspberries thoroughly, remove all the stalks and dry.
Step 2
Take a deep bowl. Separate the yolks from the protein, gently beat the yolks with sugar, add sour cream, butter, soda, slaked with vinegar, flour. Knead the resulting mass well. After the dough acquires a uniform consistency, use a rolling pin to roll it into a layer about one centimeter thick.
Step 3
Take a shallow round baking dish or a high-sided baking sheet and brush the inside with margarine or sunflower oil to prevent the dough from burning. Place the dough into the baking pan until it reaches the top of the baking pan. Take a fork and lightly prick a layer of dough over the entire inner surface, then brush it with an egg. Be careful not to pierce the dough through.
Step 4
Place the baking dish in an oven preheated to 220-240 degrees. As soon as the base of the cake is lightly browned, remove the pan from the oven. Fill the resulting shape with raspberries so that they do not reach the top edge of the cake by literally a centimeter.
Step 5
Add a glass of sugar to the raspberries and place back in the oven for another 15-20 minutes.
Step 6
Remove the cake from the oven and let cool. After that, cover the surface of the cake with whipped cream or sour cream, whipped with sugar. Decorate the cake with raspberries and mint leaves. Homemade raspberry cake is ready, we wish you bon appetit!
