Instructions
Step 1
Choose one pike weighing no more than one and a half kilograms. Wash it thoroughly, remove all scales with a fish scaler. Cut off the head and remove the gills; do not rip open the abdomen. The fins and tail must also be retained.
Step 2
To make it easier to remove the skin, lightly beat off the pike with a wooden cutting board. Using scissors, make two cuts along the gillbones. Leave the strip of leather that connects the head to the back. Then tilt the fish's head back and very carefully, using a sharp knife, separate the skin from the meat.
Step 3
Cut the fins from the inside and trim the meat off the skin. You will have a hollow pike skin with a head and a tail. Unfold it gently and set it aside. Remove the rib and spine bones from the meat carcass, take out all the insides. Then rinse, cut into small pieces and remove any large bones.
Step 4
Take 250 grams of white bread and cut off the crust. Pour 300 grams of milk into a bowl and soak the bread crumb in it. Then squeeze out well. Peel two medium onions and chop into cubes. Grind pike meat, bread, onion and 2 chicken eggs with a blender.
Step 5
Chop as small as possible a few sprigs of parsley, the same amount of dill and 5 peeled cloves of garlic. Combine these ingredients with the prepared fish mixture. Add salt and black pepper to taste and stir again thoroughly.
Step 6
Gently stuff the pike with the filling. If in some places the skin breaks, smooth it with your fingers, then in the oven it will bake into one piece. Spread mayonnaise on all sides of the fish.
Step 7
Spread a sheet of foil on a baking sheet, lightly grease with vegetable oil and put the fish on it. Wrap the pike in foil and place the baking sheet in an oven preheated to 180 ° C. Bake for an hour. Transfer the prepared fish to a dish and garnish with lemon wedges and olives.
