  • - 450 g of tomatoes in their own juice;
  • - 150 g of carrots;
  • - one onion;
  • - olive oil;
  • - a clove of garlic;
  • - 450 g zucchini;
  • - pepper;
  • - Bay leaf.

Instructions

Step 1

Put 450 grams of tomatoes in their own juice in a saucepan and cook for 25-30 minutes without salt and oil. This is done in order to get rid of the sour taste.

Step 2

Cut 150 grams of carrots into small cubes. Chop one onion into small pieces.

Step 3

Pour olive oil into a preheated pan and put carrots. After five minutes, add the chopped onion. Stirring, fry for another two to three minutes.

Step 4

Press down on the garlic clove with the flat side of a knife, then chop. Peel the zucchini, cut lengthwise and remove the seeds with a tablespoon. Cut the courgettes into medium cubes and fry in olive oil until half cooked.

Step 5

Add browned vegetables, garlic, tomatoes on top and mix thoroughly. Pour in 100 ml of water, add peppercorns, bay leaf, salt. Simmer for 10-15 minutes over medium heat. Zucchini caviar is ready, you can serve it.
