    • For pork schnitzels:
    • pork chops - 4 pcs.;
    • flour - 1/4 tbsp.;
    • salt - 1 tsp;

    • egg - 1 pc.;
    • milk - 2 tablespoons;
    • bread crumbs - 3/4 st.;
    • paprika - 1 tsp;
    • olive oil - 3 tablespoons;
    • chicken broth - 3/4 st.;
    • dill - 2 tsp;
    • salt - 1/2 tsp;
    • sour cream - 1/2 tbsp.
    • For veal schnitzel:
    • veal - 1 kg;
    • flour - 1 tbsp.;
    • eggs - 4 pcs.;
    • vegetable oil - 1 tablespoon;
    • salt and black pepper - to taste;
    • bread crumbs - 4 tbsp.
    • For chicken schnitzel:
    • eggs - 2 pcs.;
    • garlic - 1 slice;
    • parsley - 1/2 tsp;
    • salt and black pepper - to taste;
    • bread crumbs - 1 tbsp.;
    • Parmesan cheese - 1/2 tbsp.;
    • chicken cutlets - 4 pcs.;
    • olive oil - 4 tablespoons;
    • butter - 1 tablespoon;
    • dry white wine - 1/4 tbsp.;
    • chicken broth - 1/2 tbsp.;
    • lemon juice - 1 tablespoon

Instructions

Step 1

Pork schnitzel

Beat the pork well. Prepare 3 shallow bowls. In the first, combine flour, salt and pepper. In the second, beat eggs with milk. And in the third, mix the bread crumbs with paprika. Heat olive oil in a large skillet over medium heat. Dip the pork chops first in the flour mixture, then dip them in the egg mixture and finally in the bread crumbs. Cook the pork chops in a preheated skillet for 4 minutes on each side. Wrap them in foil or place them in a warm oven to keep the chops warm. In a small bowl, combine finely chopped dill and salt with sour cream. Add chicken broth to the sour cream mixture. Boil the sauce over low heat until thickened, but not letting it boil. Serve ready-made chops with sauce and lemon slices.

Veal schnitzel

Cut the veal into steaks. Dip each one in flour. In a shallow bowl, beat eggs with 1 tbsp. olive oil, salt and pepper. Dip the steaks in the egg mixture and then in the bread crumbs. Heat 1/4 tbsp. olive oil in a large skillet over medium heat. Fry the schnitzels until golden brown, about five minutes on each side.

Chicken schnitzel

In a shallow bowl, beat eggs with parsley, garlic, salt and pepper. In a separate bowl, combine the bread crumbs with the grated Parmesan. Dip each cutlet first in the egg mixture and then in the bread crumbs. Fry them over medium heat in a little vegetable oil. Prepare the sauce at the same time. Melt butter in a frying pan, add wine. Stir for 30 seconds, then add chicken stock and lemon juice. Season with salt and pepper. Simmer for 2 minutes. Serve the chicken schnitzels with the cooked sauce. Garnish with parsley sprigs and lemon wedges.
