Step 1
Sift flour on the table in a slide. Make a small indentation in the center. Try to leave a thin layer of flour at the bottom of the hole so that the dough does not stick to the table during kneading.
Step 2
Break two eggs into flour. Break them down in the middle, as the trick to this recipe for making noodles lies in the amount of water used. Take one of the shell halves and pour warm boiled water into it. Pour into eggs. Repeat the procedure one more time. For 2 eggs, you need two halves of the shells with water. Add salt to the resulting liquid.
Step 3
Begin to gently knead the dough. First stir the flour in the center of the groove and at the bottom, and then, using gentle circular motions, begin to increase the kneading radius. Be careful not to damage the outer edges of the flour funnel, so that the dough, while it is still liquid, does not flow out onto the table.
Step 4
When the liquid becomes thick, add flour from the outside of the funnel, gradually kneading the tough dough. Don't be afraid to shift your torment. In this case, the steeper the dough, the better. Finally, beat the dough on the table a little. Cover with a towel and let sit for 15-20 minutes.
Step 5
Divide the dough in two, sprinkle the table with flour. Roll each half of the dough in different directions until you get a thin layer, about 2-3 mm thick. After that, cut the layer into thin long plates and chop into thin strips. Dough must be cut immediately, as it dries very quickly and becomes brittle as a result.
Step 6
Boil the cooked noodles in boiling salted water for 10-15 minutes. Then add to the broth, sprinkle with herbs and serve!
