Fried eggplant snacks are delicious. Eggplant rolls stuffed with boiled eggs, hard cheese and garlic are ideal for a summer holiday table.
It is necessary
- - 2 eggplants;
- - 1 egg;
- - 2 tbsp. l. vegetable oil;
- - 2 tbsp. l. mayonnaise;
- - 50 g of hard cheese;
- - salt to taste;
- - 2 cloves of garlic.
Instructions
Step 1
Wash the eggplants, cut off the stalk, cut into 2 mm strips. Transfer the eggplants to a bowl, salt. Leave it for ten minutes for them to release the juice.
Step 2
Pour in half a glass of water, lightly rinse the plates to get rid of the bitterness and excess saltiness. Drain the water, squeeze the eggplant a little.
Step 3
Pour the oil over the eggplant and fry in a dry skillet to control the amount of oil absorbed.
Step 4
Fry the eggplant on both sides in a dry skillet for 3 minutes. Cool the finished eggplants under the lid - so they will be soft.
Step 5
Grate the cheese on a fine grater. Boil the egg and grate it too. Combine cheese with egg and add garlic. Season the mixture with mayonnaise, mix well. Season with salt.
Step 6
Place a teaspoon of the filling on the eggplant plate and roll it up. Put the rolls in the refrigerator for several hours, serve on the table as a cold snack.
