It is necessary

  • - 1/2 cup wheat flour;
  • 1/2 cup whole wheat flour
  • - 70 g of sugar;
  • - 1 lemon;
  • - 5 tbsp. tablespoons of vegetable oil;
  • - 1/2 teaspoon baking powder.

Instructions

Step 1

Put a whole lemon in a saucepan, pour boiling water over it, cook it for 10 minutes, thanks to this, excess bitterness will go away from the lemon zest. Cool the lemon, cut it into pieces, remove all seeds, chop in a blender until puree.

Step 2

Mix dry ingredients separately: wheat flour, whole grain flour, baking powder, sugar. Add lemon puree to the dry mixture, pour in vegetable oil, knead into a soft dough. The result is a very obedient dough, with which it is a pleasure to work.

Step 3

Roll out the dough with a rolling pin into a layer 0.7 centimeters thick. Roll out on a dry floured surface or silicone mat. Squeeze cookies out of this layer with cookie cutters. Place it on a baking sheet.

Step 4

Bake for 10-15 minutes at 180 degrees, lemon cookies should be golden brown. You can keep the cookies in the oven longer if you like very crispy baked goods.

Step 5

You can sprinkle the finished lemon cookies with icing sugar or serve just like that. Together with hot tea, it turns out very tasty. For lemon lovers, these cookies are a real find!
