For royally cooking fish, take the following ingredients:

- fish - 2.5 kg;

- mushrooms - 600 g;

- carrots - 2 pcs.;

- lemon - 1 pc.;

- onions - 2 pcs.;

- vegetable oil - 6-7 tablespoons;

- cream - 100 ml;

- coriander - to taste;

- ground black pepper - to taste;

- salt to taste.

For this dish, you need to get a whole pike, pike perch or salmon. It is better to take cream with a fat content of 20%. You can take any mushrooms to taste, preferably champignons.

Cooking a dish

First, wash the mushrooms thoroughly, cut them into thin slices. Heat a frying pan, add vegetable oil and fry the mushrooms until the liquid has completely evaporated. Then take onions, peel them, chop finely and add to the browned mushrooms. After a few minutes, when the onions are fried, add the carrots, previously peeled and grated on a coarse grater, into the pan. Add salt and pepper and cook for about 5 minutes, then add cream and mix thoroughly.

Now start preparing the fish. It must be thoroughly rinsed, cleaned and gutted without separating the head and tail. Then dry the fish with napkins, then make several cuts inside and place the lemon slices in them. Season with salt and pepper and add coriander.

Stuff the fish with mushrooms and secure the incision with toothpicks or special clamps. Wrap the fish tightly in foil and place in an oven preheated to 160 ° C for one hour. Then open the foil, increase the temperature to 200 degrees and bake the fish until golden brown. It is best to serve the fish royally on a long, flat platter, garnished with pickled tomatoes, cucumbers and herbs.

Fish royally can also be cooked not in foil, but in the form. Then potatoes, sour cream, eggs, tomatoes, milk and cheese are added to the list of ingredients. The first layer in the mold is put potatoes cut into slices, greased with sour cream or homemade mayonnaise. The next layer is mushrooms fried with onions. Put on top fish fillet, deboned. And also smeared with sour cream. Everything is poured with a mixture of 3-4 beaten eggs and 300 ml of milk, sprinkled with dill. Top the dish with grated cheese and tomato rings. The form is sent to an oven preheated to 180 ° C for about 35-40 minutes. To prepare this dish, you need to use a wide dish or a baking sheet with high sides so that the fish and vegetables are evenly baked and saturated with the filling.
