There are two types of potato biscuits - sweet and savory. The latter are usually served with sauce as a side dish for meat. The first ones play the role of desserts, and not everyone will be able to determine that the main ingredient in such a biscuit is potatoes. Especially if it comes with some kind of cream, for example, vanilla.

It is necessary

    • Dough:
    • 250 g potatoes;
    • half a lemon;
    • 4 eggs;
    • 60 g ground almonds;
    • 1 tsp potato starch.
    • Filling:
    • 1 pack of vanilla pudding
    • 300 ml of milk;
    • 200 g cream;
    • 40 g sugar;
    • 200 g raspberries.

Step 1

For the preparation of biscuits, it is best to take mealy, boiling potatoes. Clean it, rinse it well, fill it with water. Large tubers should be cut into 2 or even 4 pieces. Put the pot on fire, cook for 20 minutes, then drain the water and leave the pot with the lid open to dry the potatoes. When it cools a little, rub it through a sieve.

Step 2

Preheat oven to 200C. If it has the function of blowing hot air, 180 ° C will be quite enough.

Step 3

Measure exactly 150 grams from the total amount of potatoes.

Step 4

When buying a lemon, try to choose one that has not been treated with chemicals. Wash it well with hot water, remove the zest with a fine grater, squeeze the juice out of the pulp.

Step 5

Separate the whites from the yolks. Set the former aside for now, and rub the latter with a spoon or beat with a mixer with sugar until whitening. Add lemon juice and zest. Continue whisking in small portions of potatoes until you have added all 150 grams.

Step 6

Stir in potato starch and almonds into the finished dough. Beat the whites until a strong foam, stir them into the dough with gentle spoon movements from the bottom up.

Step 7

Line the bottom of the baking pan with parchment, or brush well with some neutral oil. Place the dough in a mold and bake it in the oven for 40 minutes. Cool the finished cake, remove it on a cutting board. Using a sharp knife or nylon thread, cut horizontally in half.

Step 8

To make the cream, combine the vanilla pudding mix with milk, sugar, and cream. Boil them together as indicated on the package. Cool slightly.

Step 9

Rinse fresh raspberries gently, place on a tea towel, and dry. Spread the berries over the bottom cake, cover them with the resulting cream and complete this whole structure with the top cake, which can also be greased with the rest of the cream. You have a real potato sponge cake.
