Instructions

Step 1

First you need to wash the potatoes well, peel and boil, but cook so that they do not crumble, it is better to let it be slightly undercooked than overcooked. Boiled potatoes must be removed on a plate in order to dry out a little.

Step 2

Then you need to grate the potatoes on a coarse grater. Next, put butter, spices in the potatoes, separate the whites from the yolks and add the yolks to the potato mass. Grind the greens and also pour them into the resulting mass, everything must be mixed well. Then you need to add flour, mix everything thoroughly until smooth, then we begin to form balls, bread them in flour and put them on a plate.

Next, the separated proteins must be whipped well. Then we do the following operations with our balls: first, dip them in a cup with beaten egg whites, then thoroughly bread in breadcrumbs. After breading, we put our croquettes in a well-heated frying pan with vegetable oil, fry them until an appetizing golden brown crust appears.

We take it out on a plate, on the bottom of which you need to lay a napkin so that the excess oil is absorbed and the croquettes are not greasy. Serve croquettes as a side dish for meat dishes.
