Potatoes, which Peter I grafted with battle in the 17th century, have long been Russia's "second bread". Surely there are potatoes in your daily diet. Fried, boiled … Meanwhile, there are a great variety of potato dishes. For example, potato croquettes can be served on the festive table.

- 1 kg of potatoes;
- 100 g butter;
- 150 ml of milk;
- 200 g lean ham;
- salt
- spice;
- 1 egg yolk;
- 1 tbsp. l. cream 15-20% fat;
- 3 tbsp. l. bread crumbs;
- 150-200 g of vegetable oil for deep fat;
- greens
- cherry tomatoes and thin strips of ham for garnish.
Instructions
Step 1
Put a pot of water on the fire (about 2-2.5 L).
Step 2
Wash the potatoes, peel them and cut them into 0, 8-1, 0 cm thick rounds - so that they boil faster and better.
Step 3
When the water boils, season with salt and lower the peeled and chopped potatoes.
Step 4
Boil the potatoes until soft, then drain.
Step 5
Put butter in potatoes, stir, heat lightly.
Step 6
Boil milk, pour into potatoes, add egg yolk, salt, spices to taste, mash in mashed potatoes. It is advisable that no lumps remain in the potatoes.
Step 7
Cut the ham into small cubes and stir in the puree. Leave to cool.
Step 8
In the meantime, prepare the ice cream - whisk the egg yolk with cream, a pinch of salt and white pepper.
Step 9
Heat vegetable oil in a heavy saucepan or deep fryer.
Step 10
Form balls with a diameter of 3.5-4 cm from the cooled mashed potatoes with ham with slightly damp hands.
Step 11
Dip the balls in ice, then roll in breadcrumbs.
Step 12
Fry the resulting croquettes in hot oil for 1-2 minutes. The butter must completely cover the croquet!
Step 13
Use a slotted spoon or slotted spatula to remove the croquettes from the butter and place them on a paper towel lined plate (to absorb excess fat).
Step 14
Place croquettes on serving bowls. Garnish with herbs, cherry tomatoes and thin strips of ham.
