Beets are an amazing vegetable. It contains a lot of microelements and vitamins we need, fights cancer cells, improves liver function, etc. Considering that beets are available at any time of the year, you should not neglect them in the preparation of various dishes.
It is necessary
- beets - 2 pcs.,
- brown and wild rice - 50 g,
- onions for salad - 1 pc.,
- fresh dill - 4 branches,
- olive oil - 2 tablespoons
- balsamic vinegar - 1 tbsp. l.,
- lemon juice - 1 tsp,
- salt, pepper, sugar - pinch at a time.
Instructions
Step 1
Pre-bake the beets in foil, or cook in the microwave. Cool, peel, cut into cubes.
Step 2
Rinse the rice well, boil in salted water until tender.
Step 3
Peel the onion, cut into thin half rings. Chop the greens finely.
Step 4
Prepare a salad dressing. To do this, mix olive oil with balsamic vinegar, lemon juice, a pinch of sugar, pepper and salt. Dip the chopped onion rings into the dressing, leave them there for 5 minutes, then remove.
Step 5
Combine beets, rice, herbs in one container. Add onion, stir. Pour with salad dressing, let it brew for 10 minutes. Rice and beetroot salad is ready.
