    • 2 tbsp butter.

Step 1

Prepare unleavened yeast dough: sift flour, pour it into a bowl, make a depression in the middle. Divide the yeast into small pieces, put in a well, add half a teaspoon of sugar. Heat the water, pour three tablespoons of warm water into the yeast and stir in the well until a mushy condition.

Step 2

Place the lid on the bowl and leave in a warm place for fifteen minutes. Add salt, water, olive oil and knead the dough. Knead, pressing firmly against the work surface for at least ten to fifteen minutes. Roll the dough into a ball, make a cruciform cut on top, dust with flour and leave to rise for forty-five minutes.

Pound the dough, roll it out in a layer about half a centimeter wide. If you are preparing the dough for future use, wrinkle it and place it in the freezer immediately. Preheat oven to 250 ° C, grease a baking sheet with oil, add dough, filling and bake for eight to ten minutes.

Step 4

Use, as an option, instead of the usual brewer's yeast, this will give the taste a peculiar shade. Sometimes dry chopped herbs are added to unleavened yeast dough: basil, rosemary. If you are preparing the dough for future use, do not immediately add olive oil to it, do it after defrosting it and preparing it for baking.

Prepare the dough without adding yeast: beat eggs with salt, add soda to sour cream and stir. Pour the beaten eggs into the sour cream, add softened butter and flour. Knead the dough with your hands or use a mixer with an attachment to mix the dough.

Step 6

Grease a baking sheet with vegetable oil, then generously grease your hands with vegetable oil, put the dough with your hands on a baking sheet, spread in a thin layer (about 0.5-0.7 centimeters), put the filling and bake in a hot oven (250 ° C - 270 ° C) for ten minutes.
