Celery has a pleasant taste and aroma, as well as a low calorie content and a high vitamin content. The stems, leaves and roots of this plant are used to prepare soups, hot dishes and, of course, various salads on their basis. Celery goes well with sweet fruits, a variety of vegetables and cheese.
An unusual and very beautiful dish is a fruit salad with celery and cheese. It has a pleasant sweetish taste, which is emphasized by the salty notes of roquefort and the characteristic spicy aroma of celery.
Cut 185 g Roquefort cheese into cubes. Fry 90 g of walnuts in a dry frying pan, cool and chop coarsely with a knife. Peel 3 celery stalks of tough fibers and cut into small pieces. Wash and dry 1 kiwi, 90 g seedless light raisins, 90 g red grapes, 100 g strawberries. Cut the kiwi into thin semicircles, divide the grapes and strawberries into halves. Place all ingredients in a large salad bowl.
Instead of strawberries and grapes, you can use a mixture of red currants and raspberries.
In a separate container, whisk 150 ml of low-fat sour cream, 0.5 teaspoons of Worcester sauce, 2 tbsp. tablespoons of freshly squeezed lemon juice. Stir the sauce thoroughly, pour the prepared food with it and shake the salad bowl well so that all the ingredients are saturated with the filling.
Celery goes well with any fruit, but it is especially good in a duet with apples. Choose sweet and juicy fruits and complement the composition with avocado pulp, cheese and mint. Peel the not too ripe avocado, remove the stone, cut the pulp into cubes. Chop 2 large sweet apples, without peels and seeds. Place apples and avocados in a large bowl, add 60 g seedless raisins, 100 g chester cheese, 150 g sweet corn.
Mix 100 g of natural yogurt with 2 tbsp. tablespoons of apple juice, 1 tbsp. a spoonful of chopped mint greens. Pour the sauce over the salad and stir. Serve heaped on lettuce leaves.
Boiled chicken can be replaced with fried. The salad will acquire a different, no less pleasant taste.
Make a hearty chicken salad that can easily replace your main course for lunch or dinner. Boil 400 g of skinless chicken fillet. Chill the meat and cut into cubes. Grind 100 g of blue cheese in the same way. Cook and refrigerate 100g brown rice. Mix the ingredients in a salad bowl, add 100 g of chopped celery root. Cut 3 ripe sweet red apples and 60 g radishes into thin slices and place in a salad too. In 150 g of unsweetened yogurt, add salt, freshly ground black pepper and 1 teaspoon of sweet mustard. Combine the sauce, pour over the salad and stir. Serve with toasted bread or baguette.
A very tasty and easy option is a salad with herbs, celery and grapes. It can be served as an appetizing snack or a side dish with grilled meat or fish. Wash and dry the Frize and Radiccio salads. You will need one bunch of each grade. Chop the radiccio into strips, mix with 1 large bunch of small seedless grapes and 2 celery stalks, cut into small pieces. Line a bowl with Frize salad.
In a jar with a tight-fitting lid, combine olive oil, salt, freshly ground black pepper, juice of 1 lemon, and sweet mustard. Shake the container well to smooth the sauce. Drizzle over the celery, grape and radiccho mixture, stir well and place in a bowl over the frisee leaves. Serve immediately.
