It is necessary

  • - 1, 2 kg of veal tenderloin;
  • - 600 g of fresh strawberries;
  • - 100 ml of dry white wine;
  • - 100 g of butter;
  • - olive oil (for frying);
  • - black pepper, cayenne pepper;
  • - 2 sprigs of rosemary;
  • 1 tablespoon dark brown sugar
  • - 2-3 thin stalks of leeks (only the white part);

Instructions

Step 1

Separate the clipping from the films, cut across into 3 cm thick pieces and beat lightly. Rub the pieces with salt and pepper, brush with olive oil, set aside and use other ingredients.

Step 2

For rosemary, separate the leaves from the stems. Slice the leek lengthways and then cut into thin half rings. Fry the leeks and rosemary in a preheated skillet in a mixture of two tablespoons of butter and two tablespoons of olive oil for 3 minutes.

Step 3

Add wine and brown sugar, bring to a boil and then cook over low heat until the liquid evaporates. Then remove from heat. Peel the strawberries, cut into halves and smaller pieces.

Step 4

Preheat a large, heavy-bottomed skillet without oil. Cook the veal in batches in a pan for 4 minutes on each side. Then transfer to a baking sheet, previously covered with foil, and place in an oven preheated to 170 ° C for 15 minutes.

Step 5

In the pan where the meat was fried, melt the butter and sugar, put the strawberries and onions with rosemary leaves, season with hot pepper. Fry the mixture over medium heat for 1-2 minutes.

Step 6

Remove from heat, add black pepper, stir. Serve veal immediately with strawberry seasoning on top or side by side.
