It is necessary

  • - veal tenderloin 1.5 kg;
  • - fresh strawberries 600 g;
  • - dry white wine 100 ml;
  • - dark sugar 1 tbsp;
  • - butter 100 g;
  • - olive oil;
  • - Leek stalks (white part) 3-4 pcs.;
  • - rosemary 2 sprigs;
  • - cayenne pepper, black pepper, salt.

Instructions

Step 1

Peel the tenderloin of films, cut across into pieces 3 cm thick and slightly beat off. Rub the pieces with salt and pepper, brush with olive oil, set aside. For rosemary, separate the leaves from the stems. Cut the leeks lengthwise and then into thin half rings. Fry the leeks in a mixture of 2 tablespoons of olive oil in a preheated skillet with rosemary for 3 minutes. Add wine and sugar, bring to a boil and then cook over low heat until the liquid evaporates. Remove from heat.

Peel the strawberries, cut into halves and smaller pieces. Preheat a large heavy-bottomed skillet without oil. Fry the veal in a pan for 4 minutes on each side. Then transfer to a baking sheet covered with foil and send to an oven preheated to 170 ° C for 15 minutes.

Step 3

In the same frying pan, melt butter and sugar, add strawberries and leek and rosemary gravy, season with hot pepper, stir, fry over medium heat for 1-2 minutes. Remove from heat, season with black pepper, stir. Serve the veal immediately with strawberry sauce on top or side by side.
