There are many varieties of tomato pickles. This recipe is supplemented with caraway seeds, which gives the preparation a special zest and pleasant aroma. The basic principle of pickling such tomatoes is not very different from other recipes. However, you will be pleased with the result.

It is necessary

  • –– fresh tomatoes of medium size (2-4 kg);
  • - cumin (5 g);
  • –Carnation (5-7 pcs.);
  • –Stairs (4-6 pcs.);
  • - garlic (2 cloves);
  • - allspice (6 peas);
  • –Black pepper (7 peas);
  • –Sugar and salt to taste;
  • - vinegar essence 70%.

Instructions

Step 1

Take the tomatoes first, remove the stalks and rinse each tomato. Next, you need to prepare the jars. Choose any sterilization method. It is better to take cans with a volume of no more than 1 liter.

Step 2

Place sterilized jars on the table. Put spices in each in certain proportions. At the bottom of the cans, successively lay out 1 g of caraway seeds, one bay leaf, then a clove of garlic, 2 peppercorns, and 1-2 cloves.

Step 3

Place the tomatoes on top of the spices so that the jars are completely filled. Boil water and pour immediately into jars. Cover with lids and leave to infuse for a while.

Step 4

After 15-20 minutes from each jar, pour the water into a deep saucepan. Now we need to prepare the marinade. To do this, add 4 tbsp each to 1 liter of water. l. granulated sugar and 1, 5 tbsp. l. salt. Boil the marinade until the sugar and salt crystals are completely dissolved.

Step 5

Pour tomato jars with the resulting marinade. Do not forget that the marinade is poured up to the neck. Now all that remains is to add the vinegar. A liter jar needs half a teaspoon of vinegar.

Step 6

Roll up each jar with a sterilized lid and leave to cool. The best option is to wrap it in a blanket and wait until it cools completely.
