Verrines are a French appetizer in a glass. Delicate mousse of salmon and fresh cucumber is a very successful combination for such a beautiful serving. Can be served in small glass vases.
It is necessary
- For six servings:
- - 150 g each fresh salmon, smoked salmon;
- - 100 ml of cream;
- - 1 small onion;
- - 2 cloves of garlic;
- - 1 fresh cucumber;
- - 1 egg yolk;
- - half a lemon;
- - 1 tbsp. a spoonful of olive oil;
- - dill, salt, freshly ground pepper, green onions.
Instructions
Step 1
Cut fresh salmon into slices, place in the oven, heated to 180 degrees, for 10 minutes. Combine smoked salmon with oven salmon, dill, peeled onion in a blender.
Step 2
Mix lemon juice from half a lemon with egg yolk, add olive oil, chopped green onions. Squeeze the peeled cloves of garlic there through a garlic press. Knead the flavored fish sauce thoroughly.
Step 3
Now blend the blender salmon with the cooked lemon sauce. Whip the cream into a strong foam, carefully combine with the salmon.
Step 4
Wash one fresh cucumber, cut into small cubes, and salt. Set aside for at least 15 minutes, then drain all the juice from the cucumber. You can even squeeze the cucumbers a little so that excess moisture does not get into the snack. Divide the cucumber into small glass cups and pepper to taste.
Step 5
Place a tender salmon mousse on top of the cucumbers. Garnish the verrines with fresh herbs. Refrigerate for 1 hour to cool the snack well. You can decorate the top as you like - with whole pieces of fish, lemon wedges. After that, serve ready-made verrines with salmon and fresh cucumber to the table.
